This savory recipe puts a spin on the steak Diane by featuring Chairman’s Reserve® pork tenderloin. Made popular in the 1950s and early 1960s, fine dining restaurants cooked this dish table-side for their customers. 

Cognac was typically used in the sauce, which was lit by the waitperson and made for a very theatrical presentation.

This holiday recipe skips the alcohol, but keeps all the delicious flavors of the original. It uses Chairman’s Reserve®  pork tenderloin, an exceptional cut of meat. The product is held to the strictest standards and is always tender, juicy, and flavorful. 

This dish comes together easily, with a sprinkle of lemon pepper and a few other mouthwatering ingredients. Plus, the combination of Dijon mustard, Worcestershire, lemon juice, and parsley in a savory sauce complements the meat perfectly. 

While enjoying this dish with family and friends, you can share a few fun facts about the origination of its name. 

Steak Diane (or, in this case, pork tenderloin Diane) was named after the Roman goddess Diane (or Diana) who was Goddess of the Hunt and the Moon. 

Chairman's Reserve® Pork Tenderloin Diane

Prep time: 10 minutes

Cook time: 6 minutes

Ingredients

1 Chairman’s Reserve® Pork Tenderloin (about 1lb), cut crosswise into 8 pieces

2 tsp lemon pepper

1 tbsp butter

1 tbsp fresh lemon juice

1 tbsp Worcestershire sauce

1 tsp Dijon-style mustard

1 tbsp minced parsley

Cooking Instructions

1. Place pork pieces between 2 pieces of plastic wrap; flatten slightly with heel of hand. Sprinkle

lemon pepper on pork.

2. Heat butter in a large nonstick skillet over medium to medium-high heat until hot. Add pork and

cook to medium rare (145°F) doneness, about 6 minutes, turning occasionally. Remove and

keep warm. 

3. Add lemon juice, Worcestershire sauce, and mustard to the skillet. Cook and stir until

heated through. Pour over pork and sprinkle with parsley.
