ibp Trusted Excellence® Cowboy Style Chuck Roast with Beans

Yield: 6 servings

Prep time: 5 minutes

Cook time: 2½ - 3 hours

Ingredients

4 tbsp. olive oil

2 large sweet onions, thickly sliced

2 tbsp. chopped garlic

1 3 lb. ibp Trusted Excellence® boneless chuck roast

1 tbsp. salt

1 tsp. cumin

1-2 tsp. ground chipotle powder (depending on taste)

1 tsp. fresh oregano leaves

2, 13.5 oz. cans of pinto beans, drained

2 cups fresh salsa

1-12 oz bottle of lager beer

Cooking Instructions

  1. Heat 2 Tbsp of the olive oil over medium heat in a 12” Dutch oven.  Add sliced onions and chopped garlic. Cook, stirring with a wooden spoon, for five minutes or until the onions are slightly translucent. Remove onions from the pan momentarily and wipe out any excess particles. 
  2.  Preheat the oven to 350°F.
  3. Season the meat with salt and cumin.
  4. Put two more tablespoons of olive oil into the Dutch oven and turn the burner heat to high. When the oil is hot but not smoking, add seasoned meat and cook for 4 minutes per side.  Remove from heat.
  5. Add chipotle pepper powder and oregano.  Add onions back into the pan, along with salsa, beans, and beer. 
  6. Place the cover on the pot and place it into the oven. Cook for 2½ to 3 hours, until very tender.
