Featured Holiday Recipe: Star Ranch Angus® Classic Prime Rib with Creamy Horseradish Sauce

Back Print

October 27, 2022

The team at CHEF’STORE® thanks Star Ranch Angus® for their sponsorship and for sharing this delicious recipe with us.

Prime rib is synonymous with holiday dinner. This traditional entree is made from the primal cut of bone-in beef rib. The beauty of prime rib is its intermuscular fat, known as marbling. The more marbling found within the cut of beef, the more tender it becomes when cooked. Prime rib is packed with perfect marbling! Plus, the cooking method is low and slow, which keeps the roast from shrinking too much and makes for a succulent bite every time.

The key to an outstanding rib roast is beef quality. The meat itself should be bright and fresh looking. Star Ranch Angus® provides 100% Angus cuts that are hand selected, and hand-trimmed to ensure it satisfies every palate. And with a USDA Choice quality grade, it’s beef you know you can trust. When you purchase their prime rib, you can rest assured it’s going to be flavorful, juicy, and a hit for the holidays!

Star Ranch Angus® Classic Prime Rib with Creamy Horseradish Sauce

Yield:  6 – 8 servings

Prep time: 10 minutes

Cook time: 1¾ to 2½ hours

1 Star Ranch Angus® Beef Ribeye Roast, small end (4 to 6 lb)

Spice Rub:

1 tbsp. garlic-pepper seasoning

1 tbsp. dried basil

1 tbsp. dried thyme

2 tbsp. chopped fresh parsley

Horseradish Sauce:

1 cup sour cream

¼ cup prepared horseradish

2 tbsp. milk

1 tbsp. snipped fresh chives

8 tsp. pepper

Cooking Instructions

  1. Heat oven to 350°F. Combine rub ingredients; press onto beef roast.
  2. Place roast, fat side up, on a rack in a shallow roasting pan. Insert ovenproof meat thermometer so the tip is centered in the thickest part of beef, not resting in fat. Do not add water or cover. Roast in 350°F oven for 13/4 to 2 hours for medium rare; 2 to 21/2 hours for medium doneness.
  3. Meanwhile, combine sauce ingredients in a small bowl. Cover and refrigerate until serving.
  4. Remove roast when meat thermometer registers 135°F for medium rare; 150°F for medium. Let stand for 15 minutes. Note: Temperature will rise to 145°F for medium rare; 160°F for medium.
  5. Carve roast, season with salt. Serve with sauce.
