Featured Recipe: McCormick Culinary® Chesapeake Cioppino With OLD BAY® Seasoning

Originating from San Francisco, cioppino is an Italian-American fish stew developed in the late 1800s by Italian immigrants who fished off Meiggs' Wharf. Today, it is a staple dish in many restaurants around the country. This twist on a classic adds flavors of the Chesapeake region with OLD BAY® Seasoning and fresh ingredients and seafood.

McCormick Culinary® Chesapeake Cioppino With OLD BAY® Seasoning

Yield: 4 servings 

Prep time: 10 minutes

Cook time: 55 minutes

Ingredients

2 tbsp. Unsalted butter

1 tbsp. Olive oil

1/2 cup Celery, diced

1 cup Onion, diced

1/2 cup Fennel, thin sliced

2 tbsp. Garlic, minced

2 cups Chardonnay

2 oz. Pernod

1 tbsp. OLD BAY® Seasoning

1 McCormick Culinary® Bay Leaf

1/2 tsp. McCormick Culinary® Oregano, Mediterranean Style

1/4 tsp. McCormick Culinary® Red Pepper, crushed

1/4 tsp. Worcestershire Sauce

2 cups Chicken stock, low sodium

3 cups Tomato puree, low sodium

1/2 Lemon, sliced

1 pound Shrimp, 16/20, peeled & devained

1 pound Maryland Blue Crab meat, jumb lump

12 Oysters, shucked

1 pound Rock Fish, large cubes

24 Mussels, cleaned

Cooking Instructions

  1. Combine butter and olive oil in a medium stock pot. Heat on medium until butter has melted.
  2. Add celery, onion, garlic and fennel to the stock pot. Saute until onion has become translucent.
  3. Stir in chardonnay, Pernod, OLD BAY Seasoning, oregano, crushed red pepper, and Worcestershire Sauce. Bring to a boil for 5 minutes or until a good amount of the alcohol has cooked off.
  4. Add chicken stock and tomato puree. Bring to a boil, reduce heat to low, cover and simmer for 30 minutes.
  5. Add the sliced lemon, shrimp, whole crab meat, oysters, rock fish and mussels, staggering to accommodate for cook times. Cover and simmer for 5 minutes or until mussels have opened.
  6. Serve hot and sprinkle with extra OLD BAY if desired.
