These tiny Dutch pancakes, aka Patty Cakes, get a creamy dose of peanut butter and a little cinnamon spice to bring on holiday flavors. The secret ingredient is a scoop of protein powder in the batter, which is great for an extra energy boost. Throw in potassium-rich bananas and a dash of flaxseed, giving you a powerhouse of flavor and nutrition.

J.M. Smucker Co. PB Patty Cakes

AKA Poffertjes, these tiny Dutch pancake puffs offer bananas, oats, peanut butter, and protein powder in the batter, and a peanut butter sauce drizzled on top for functional drool fuel.

Yield: 4 (each serving feeds 4-5 people)

Prep time: 10 minutes

Cook time: 10-15 minutes

Ingredients

Mini Pancake Puffs:

1 cup Rolled oats

¼ cup Water, room temp

1 Banana, ripe

2 oz. Jif Natural Peanut Butter Sauce

2 Eggs

½ cup Egg whites

4 tsp. Baking powder

¼ tsp. Salt

¼ tsp. Cinnamon powder

2 tbsp. Flaxseed meal

2/3 cup Vanilla whey protein powder


Garnish:

4 oz. Jif Natural Peanut Butter Sauce
4 tbsp. Butter, cut into cubes

Cooking Instructions

  1. Heat a griddle to 350 F.
  2. To make the mini pancake batter, add all the ingredients into a blender and blend until thoroughly combined.
  3. Transfer the pancake batter into a squirt bottle for easy pouring.
  4. Squeeze enough batter for 1” circle of pancakes on the hot griddle and cook on both sides.
  5. To serve, place 15-17 mini pancake puffs into a bowl, drizzle with peanut butter sauce and finish with a cube of butter to melt.
