This strip loin roast recipe delivers flavor like no other! Fresh garlic and rosemary, mixed with olive oil, salt, and pepper, blend together perfectly. The spicy garlic sweetens as it cooks and combines  with the woodsy, aromatic flavor of rosemary. This combination creates a caramelized crust as its flavors enrich the succulent strip loin.

Tyson Star Ranch ANGUS® Rosemary and Garlic Strip Loin Roast

Yield: 8 servings Cook time: Total cooking time is approximately 1.25 to 1.5 hours, but will vary based on different ovens and desired doneness. 

Ingredients

3 tbsp. Olive oil

1 tsp. Freshly ground black pepper

2 tsp. Kosher salt

2 tbsp. Fresh garlic cloves, roughly chopped

2 tbsp. Fresh rosemary, roughly chopped

1 Star Angus Ranch® strip loin roast, about 4 lbs.

Cooking Instructions

  1. Preheat Oven to 400F.
  2. Rub outside of meat with olive oil, salt, black pepper, rosemary, and garlic.
  3. Place roast into a medium-sized roasting pan with a rack inside (so that oven heat can circulate all the way around the roast).  
  4. Roast in the middle of the oven at 400F for 10 minutes, watching to make sure that garlic does not get too brown. 
  5. Reduce oven temperature to 350F and lay a piece of foil loosely over the roast to keep garlic from burning. Set the timer for 50 minutes.
  6. After the timer goes off, begin to monitor the cooked temperature with a meat thermometer. Final temperature for medium-rare should be 135ºF, with a resting time of 10-15 minutes before slicing.
