BEN’S ORIGINAL™ Thanksgiving Stuffing Sandwich

Yield: 4 servings

Prep time: 5 minutes

Cook time: 20 minutes


2 cups BEN’S ORIGINAL™ Classic Cornbread Stuffing, prepared

1 ¼ cups orange juice

12 oz. fresh cranberries

1 orange, pitted, peeled, chopped

1 green apple, cored, diced

12 dried apricots

1 cup honey

½ tsp cardamom

8 slices seeded bread, lightly toasted

¼ cup mayonnaise

2 pounds turkey breast, skin on, roasted whole, carved

Cooking Instructions

1. Chutney: In a sauce pot, combine orange juice, cranberries and oranges. Bring to a boil, reduce heat, partially cover, and continue cooking until cranberries pop open. Add remaining ingredients and cook on low until thickened, about 15 minutes.

2. Assemble: Preheat oven to 400ºF. Spread out prepared stuffing on a sheet pan. Place in the oven and bake until crisp. Remove and set aside. Build the sandwich by placing mayonnaise on the bottom toast followed by the turkey, crisp stuffing, cranberry chutney, and then top with toast and serve.
